In a deep, wide saucepan with a lid over medium to high heat, heat olive oil until it bubbles. Add onion, mushrooms, 1/2 teaspoon salt, and thyme and cook, stirring occasionally, until onion and mushrooms begin to caramelize, about 10 minutes. Add garlic and cook for 1 more minute. Add white wine and stir if using. Transfer the onion and mushroom mixture to a bowl.
