Bake a test cookie. I can’t tell you how many times I’ve filled the pan with cookies only to realize after baking that I should have done something different – lay them out more or less, chill the dough more, that’s the thing. Adjust baking time. (I often find myself shouting this on TV while watching “The Great British Baking Show.”) Especially if you’re working with an unfamiliar recipe, make yourself a rat biscuit or two. lang to see how they bake. The commitment period isn’t long, as the cookies bake pretty quickly and you’ll probably save yourself in the long run. If you have a smaller pan, such as a quarter sheet or jelly pan, use it for test batch, while you prepare the rest of the dough on your half-sheet pan.
